Ingredients
- fresh chow mein noodles — 350 g
- chicken breast — 200 g, sliced thin
- cabbage — 1/4 head, shredded
- carrot — 1, shredded
- soy sauce — 2 tbsp
- oyster sauce — 1.5 tbsp
- sesame oil — 1 tsp
- cooking oil — 2 tbsp
Steps (beginner-friendly)
- Boil the noodles in a pot of water for 2 minutes (they should still be springy), then drain and rinse under cold water so they stop cooking.
- Slice the chicken as thin as you can against the grain.
- Heat 1 tbsp oil in a wok over high heat. Stir-fry the chicken 2-3 minutes until white all over and no pink remains. Remove to a plate.
- Add the remaining oil, then the cabbage and carrot. Stir-fry on high heat 1-2 minutes until the cabbage wilts slightly but stays crunchy.
- Add the noodles, soy sauce, and oyster sauce. Toss with tongs for 2 minutes until every strand is coated and hot.
- Let the noodles sit undisturbed for 30 seconds to get slightly crispy bits on the bottom, then toss again.
- Return the chicken, drizzle sesame oil, toss once more, and serve.
Tip: Let noodles sit undisturbed 30 seconds in the pan for slight crispiness.
