Ingredients
- ground pork — 150 g
- potatoes — 2 medium, diced into 1 cm cubes
- garlic — 3 cloves, minced
- scallions — 2 stalks, chopped
- soy sauce — 1.5 tbsp
- dark soy sauce — 1/2 tsp
- white pepper — 1/4 tsp
- cooking oil — 2.5 tbsp
Steps (beginner-friendly)
- Dice the potatoes into small 1 cm cubes (small dice = crispy in under 10 minutes).
- Heat 1.5 tbsp oil in a frying pan over medium heat. Add the potato cubes and spread them out.
- Fry undisturbed 3 minutes, then toss and fry 4-5 more minutes until golden and easily pierced with a fork. Remove to a plate.
- Add the remaining 1 tbsp oil and the garlic; stir 20 seconds until fragrant.
- Add the ground pork and stir-fry 2-3 minutes, breaking it into crumbles, until browned and no pink remains.
- Return the potatoes, add 1.5 tbsp soy sauce, 1/2 tsp dark soy, and white pepper.
- Toss on medium-high heat for 2 minutes so the potatoes soak up the sauce and get slightly crispy at the edges.
- Turn off the heat, scatter scallions on top, and serve.
Tip: Small dice means crispy potatoes in under 10 minutes.
