Garlic Baby Bok Choy (蒜蓉小白菜) — Chinese recipe

Ingredients

Steps (beginner-friendly)

  1. Rinse the bok choy under cold running water 3 times, then cut each one in half lengthwise.
  2. Peel and mince 4 garlic cloves (chop as finely as you can).
  3. Heat 1.5 tbsp oil in a wok over high heat until it shimmers, about 1 minute.
  4. Add the minced garlic and stir for 15-20 seconds until fragrant but NOT browned.
  5. Add the bok choy all at once and stir-fry on high heat for 2 minutes, tossing constantly.
  6. The bok choy is ready when the stems look bright green and slightly translucent but still crisp.
  7. Add 1/2 tsp salt (and 1 tbsp oyster sauce if using), toss for 20 more seconds, and plate immediately.
Tip: High heat and short cooking keep the greens crisp and bright green.
