Ingredients
- lean beef sirloin — 300 g, sliced thin against the grain
- onion — 1 medium, sliced
- soy sauce — 2 tbsp
- cornstarch — 1 tbsp
- cooking oil — 2 tbsp
- black pepper — 1/4 tsp
- sugar — 1/2 tsp
Steps (beginner-friendly)
- Slice the beef thin against the grain (perpendicular to the muscle lines) so it stays tender.
- Toss the beef with 1 tbsp soy sauce, cornstarch, and black pepper; marinate 10 minutes.
- Heat 1.5 tbsp oil in a wok over high heat until smoking slightly.
- Add the beef in one layer and sear 1 minute, then stir-fry 1-2 more minutes until no pink remains; remove to a plate.
- Add the remaining oil and the onion; stir-fry 2-3 minutes until soft and lightly golden at the edges.
- Return the beef, add 1 tbsp soy sauce and the sugar, and toss 1 minute until glossy.
- Serve hot with rice.
Tip: Cutting against the grain shortens the muscle fibers, which is what makes lean beef tender.
