Ingredients
- beef steak (sirloin or flank) — 300 g, cut into thin strips
- bell peppers — 2, sliced thin
- onion — 1/2, sliced
- garlic — 3 cloves, minced
- soy sauce — 1.5 tbsp
- oyster sauce — 1.5 tbsp
- black pepper — 1 tsp, coarsely ground
- cornstarch — 1 tbsp
- cooking oil — 2 tbsp
Steps (beginner-friendly)
- Slice the beef as thin as you can, AGAINST the direction of the muscle lines (against the grain) — this makes it tender.
- Mix the beef with 1 tbsp soy sauce and 1 tbsp cornstarch; marinate 10 minutes.
- Heat 1 tbsp oil in a wok over the highest heat until smoking. Add the beef in one layer and sear 1 minute without moving it, then stir-fry 1 more minute until browned but still slightly pink inside. Remove immediately.
- Add the remaining oil, then garlic and onion. Stir-fry 1 minute until the onion softens and turns translucent.
- Add the bell peppers and stir-fry 1-2 minutes until crisp-tender — they should still snap.
- Return the beef, add 1.5 tbsp oyster sauce, the remaining 1/2 tbsp soy sauce, and 1 tsp black pepper.
- Toss on high heat just 1 minute so the beef stays tender, then serve immediately with rice.
Tip: Slice beef against the grain for maximum tenderness.
